However, if I point to Single Player and grab my XBox controller, it will allow me to load up the game. That's all it will do though.

This beta can play with non-vr and other normal branch players as well. It doesn't sound like a bug I am familiar with either. I would suggest making sure both parties have verified their installations, and see if that helps.
